Last week we blogged about how to food shop like an Italian.

This week, we’d like to share some of our favorite resources for Italian recipes and cooking techniques on the internet: Italian food blogs!

In another era, recipes were handed down in notebooks and favorite recipe collections, often from generation to generation.

That tradition continues to this day in Italy, where mothers (yes, mostly mothers) still share dog-eared recipe albums with daughters and sons (yes, sons, too!).

The internet hasn’t caused the phenomenon to disappear. Exactly the opposite: many Italian food bloggers are inspired by their parents’ and families’ culinary legacies and they take to the web to document, share, and trade notes with like-minded Italian foodies.

The follow are 5 of our favorite Italian food blogs.

Briciole

Pronounced BREE-choh-leh, this blog has it all: recipes and technique, amazing photography, concise videos, and wonderful insights into Italian cuisine, culture, and language by an Italian living in California.

Italian Food Forever

This blog is by an American ex-pat living (currently) in Umbria. The site is chock-full of recipes, gorgeous photography, and a fantastic “kitchen tips” section with a glossary, substitutions for food products not available here in the U.S., and conversions (very important when you need to use a recipe written using the metric system).

Coco de Mama

Loosely translated, coco de mama means mommy’s little baby and the title couldn’t be more appropriate for this blog inspired by recipes by the author’s mother and grandmother. “When I was growing up, although I didn’t realize it at the time, I was spoiled!” writes the author on his about page. “I had 2 of the best chefs under one roof, my Grandmother Nonna Sara and my Mama Francesca, who made every meal from scratch and with love.”

Over a Tuscan Stove

Whether hamming it up (pun intended) with one of Italy’s biggest food stars, the Italian butcher Dario Cecchini, or sharing the nitty gritty on Sicilian street food, Over a Tuscan Stove is always a great read. The author’s life seems to be as fabulous as her cooking.

Emiko tends to focus on Tuscany and Tuscan cooking on her blog because that’s where she lived for many years. But she also branches out into other regional cuisine as well. Her recipes are very precise and nearly foolproof and we really love her index of recipes (which makes the blog really easy to browse and search).

2 tbsp. flour

1 tsp. salt

1/8 tsp. black pepper

1-½ lbs. top round beef

2 tbsp. olive oil

2 cups onions, sliced

1 tsp. dry mustard

½ tsp. chili powder

2 tsp. Worcestershire sauce

2 cups canned tomatoes

½ tsp. oregano

Let’s Cook

Combine flour, salt, and pepper in a plastic bag.

Slice the top round into bite size pieces. Drop these bite size pieces into the bag, and shake to coat. (Do not cut raw meat on a cutting board that you use for cutting raw vegetables. Keep, and mark, one cutting board for meat and another one for fresh vegetables.)

Slice the onions into uniform slices, enough to equal two cups.

Measure the olive oil into a 10-inch sauté pan. Place the bite size pieces of top round in the pan to cook. Stir while browning on each side; top with the onion slices.

Combine the seasonings and tomatoes; pour over the beef and onions in the pan.  (If using fresh tomatoes, the easiest way to peel them is to drop them into boiling water. After a few seconds, take them out of the boiling water, and place them on a plate to cool. Now, the skin will easily slip off the tomatoes. Place on a cutting board, and using a sharp knife, cut the peeled tomatoes into eighths, and remove all the seeds before adding to the meat and onions.)

Cover and cook over low heat for about 1 hour and 30 minutes or until tender. Stir occasionally while cooking.

Cook the whole grain brown rice according to the package directions for four servings.

Serve this savory entrée over rice and enjoy.

La Finestra is one of our all time favorite local Restaurants in Tarzana CA for Italian Food. It has a comfortable dining room that is stylish and yet fully relaxed and friendly. The owners are friendly without being intrusive and will spend some time with you on a quiet evening or leave you to your own conversation. It is a good Eaterie in Tarzana CA.

The food is easy Italian with the things you envisage to find on the menu prepared with excellence which will truly surprise you. They do lunch too but I suspect only on weekdays. The few weekend afternoons we hoped to catch them for lunch they weren’t open.

The gnocci his hand made and light as a feather. I’ll promise you that irrespective of how many times you have had gnocci you have not had gnocci like this! Other favorites are the thin-crust pizza with gorgonzola & caramelized onions and the fagiloi soup nevertheless , singling out things is nearly purposeless because we haven’t had bad or mediocre food in lots of visits and get as much enjoyment from a salad that is performed carefully and great flavour as the other offerings.

The costs aren’t bad at all and you will solidly get as good or a better meal than you can get at other higher-priced restaurants in the valley.

This place is amazing! I was pushed to go in by a LivingSocial groupon deal. I had never heard about it, but was not dejected. I went with my young man, which was basically quite romantic, dimly lit without being dark. The nosh was amazing. We started with the Caesar salad which had a mouth-watering dressing– not so creamy, but tasty. We both split the Pizza Portofino ( gorgonzola and caramelized onions ), and it was heaven.

We also had the Petto di Pollo al Limone ( battered lemon chicken fried in butter and herbs ) which I am still craving more of 3 days later. They have this awesome thing where if you order a meat dish of some kind, it incorporates pasta, and you can ask for some of their specializations. The ravioli and the hand rolled gnocchi are both awe-inspiring. The owner was extremely nice, and alert, but the wait staff, although nice were incredibly slow. There is a lot in the back if you can’t find street parking. Yum!

Top 3 Restaurants in Tagaytay City, Philippines

Bulalo is awesome, and as far as bulalo goes, Rose and Grace is an institution. Before trying it at Rose and Grace, I thought Bulalo was a very plain dish. I didn’t think beef could taste like that.

What is Bulalo?

Bulalo is a dish comprised of beef meat that’s boiled, bones with marrow included, until all the oils are floating atop the broth. It’s a bit high in cholesterol, but the marrow part of the bulalo is very popular. While I have a natural distaste for fatty things, I still enjoy bulalo — especially from Rose and Grace’s.

Rose and Grace: My Experience

Rose and Grace isn’t technically located in Tagaytay, but is actually along the highway going to or from Tagaytay. According to their website, there are two locations — one in Sto. Tomas, Batangas, and the other in Sta. Rosa, Laguna, the latter being the one we visited on our way home from Batangas. My professor claims that during the “olden” days, before there was any traffic, people from Makati would go all the way to Laguna just to have lunch at Rose and Grace.

Aside from their restaurant offerings, Rose and Grace also sells various pasalubongs (take-home food), which you’ll notice upon entering.

During my visit, our group (of 10 people) ordered: bulalo (three orders), crispy pata, grilled tuna, fried baby shrimps, and a vegetable dish. Our bill amounted to P4,000.00, with the bulalo costing around P120.00 for one order. Rose and Grace also offers unlimited broth/soup, served in a teapot, which is delicious — for those on a really tight budget, you can always order a cup of rice to eat alongside the free broth.

Rose and Grace’s big bowl of special bulalo is the yummiest bulalo I’ve ever tasted. In fact, I may be cursed now at this point, and any other bulalo I’ll try might just be too plain, “nilagang baka,” after having tried Rose and Grace’s flavorful version.

So, if you’re in the area and craving some tasty bulalo, definitely stop by Rose and Grace’s!

Where To Go and What to Order

As a strict vegetarian for 15 years, I can suggest which restaurants to check out and what to order. Perhaps you’re taking a vegetarian out on a date; maybe you’re a new vegetarian yourself.

Please understand that my suggestions are for information-only, I am not RECOMMENDING you eat at these restaurants. Furthermore, please understand that any food processed or cooked by a fast food restaurant most likely is cooked, processed with, and even sometimes seasoned with animal by-products.

MAKING SUBSTITUTIONS

Before I jump in, let me remind you that many restaurants will be happy to accommodate a substitution you might request. For example, you’ve ordered the breakfast combo from McDonald’s. It comes with pancakes, scrambled eggs, and either sausage or bacon. Ask for a hash brown instead of the meat side, and 99% of the time they will be more than happy to do it. If you’ve ordered a sandwich with lunch meat, ask for extra cheese or some avocado.

In my experience, restaurants are almost never willing to reduce the cost of your food because you’ve ordered something minus the meat it is usually served with. If the restaurant you’re at won’t make the substitution for you, ask for the meat on the side and give it to someone else at the table or bring it home for your dog. If you’re paying for it, someone might as well eat it.

WHY NOT TO ASK FOR RECOMMENDATIONS

Remember the classic scene from My Big Fat Greek Wedding when Tula introduces her fiancé to her aunt. The aunt offers to cook for him, and Tula says, “Umm…he’s a vegetarian.” The aunt thinks for a minute and says, “It’s OK. I’ll make lamb!” Once in France, I asked a pastry shop owner (in French, of course) if she had any vegetarian quiches. She said yes and handed me a quiche. After waiting for the oven to preheat, cooking the quiche, and salivating the entire time while I waited, I learned upon first bite that the quiche had chicken in it.

This is why I do not recommend asking your waiter or waitress, “What is the best vegetarian item on the menu?” To many people, “vegetarian” means someone who merely doesn’t eat red meat. Be very clear when asking if an item contains meat. For example, tell him or her you do not eat any animal flesh–no chicken, fish, or beef–and then ask if s/he can recommend a meatless entrée. To be less off-putting, I sometimes explain to confused waiters or waitresses (with a smile, of course) that I don’t eat anything “with a face.”

Don’t forget to be clear about items in the “gray area,” such as chicken stock in soups or lard in beans. Because neither is technically animal flesh, your waiter or waitress may overlook these ingredients when trying to help you select a suitable meal.

VEGETARIAN BREAKFAST

Although breakfast is probably one of the easier meals for a vegetarian to eat, it’s not if you’re in a hurry. If you have time for a sit-down breakfast, choose IHOP, Denny’s, or Coco’s. Order pancakes, oatmeal, or eggs. If your order comes with a side of meat, ask for a potato substitution or get the meat on the side.

If you’re in need of a fast food breakfast, I recommend McDonald’s. They have many healthy, edible vegetarian options: Fruit and Yogurt Parfait (delicious!), a pancake and scrambled egg meal (as mentioned above), hash browns, Cinnamelts, Apple Dippers, and you can ask for an “egg and cheese biscuit” (like an Egg McMuffin with no meat).

VEGETARIAN LUNCH AND DINNER

As a general rule, there are really just two types of restaurants you want to avoid for lunch and dinner as a vegetarian: steakhouses and “American” food. In my personal opinion, the worst US chain restaurants for vegetarians are: Outback Steakhouse, Chili’s, and Applebee’s. You can eat better at a Black Angus Steakhouse or a Red Lobster. Why? Outback, Chili’s, and Applebee’s each only have about one token vegetarian dish on the menu. All of these restaurants don’t even offer a meatless salad on their menus.

So now that you know where to avoid, that pretty much leaves all other restaurants as decent possibilities. For vegetarians, I highly recommend Italian, Asian, and Mexican restaurants. Italian restaurants typically offer meatless minestrone, pasta, Caesar salad, and eggplant parmigiana.

My two favorite vegetarian restaurant chains in the US are the Olive Garden and Red Robin. Although Red Robin is “American food,” they will allow you to substitute a beef hamburger patty for either a Boca Burger or a GardenBurger (the only chain restaurant I know of offering a choice!).

BURGER SUBSTITUTES TO AVOID

Some restaurants make their own non-meat burger patties in house. I have never tasted a home-made fake burger that I liked. Most of them are made with weird ingredients (water cress) and don’t contain much protein. Before you chose the meatless pasta or salad dish over a fake hamburger, be sure to ask the waiter or waitress if they serve name-brand fake meat.

VEGETARIAN FAST FOOD

Like I suggested above, Italian, Mexican, and Asian is usually your best bet (Taco Bell, Pizza Hut). Sandwich places are always good (Subway, Blimpie’s, Togo’s), except that they don’t have drive-thrus. Don’t overlook some of the really great possibilities at Wendy’s, Kentucky Fried Chicken, Arby’s, and Jack in the Box. Wendy’s and Arby’s have baked potatoes with broccoli. Jack in the Box has ciabatta sandwiches (all include meat, so get it on the side or ask for extra cheese and veggies). Also, the tacos at Jack in the Box are actually made of soy meat, which they keep a secret! My favorite vegetarian fast food is a Market Fresh Sandwich at Arby’s (again, all include meat, so get extra cheese and veggies). As far as vegetarian variety goes, nobody beats Kentucky Fried Chicken (ironically).

If you live in California, the Baker’s fast food chain is a must! They actually have a vegetarian section on the menu. They serve name-brand Boca Burgers and Mexican food!

WHAT TO WATCH OUT FOR AT BUFFETS

In general, buffets are a great place for the vegetarian diner, with one exception. Many buffets (like the ones at hotels, resorts, and casinos) have theme nights. For example, Friday might be “Seafood Night.” Not only will the buffet probably have a slightly higher price tag for their seafood or steak themed night, but you won’t get your money’s worth. Simply call ahead to make sure any buffet you’re planning to eat at is not having a meaty theme that night.

GETTING CREATIVE WITH A MEATY MENU

So you’ve found yourself in a restaurant with nothing overtly vegetarian on the menu. I recommend you ask the waiter or waitress if a simple meatless dish could be made for you. For example, “I notice you have salads and sandwiches on the menu. I don’t eat meat. Would it be possible to have all the vegetables you have made into a meatless sandwich?” Some simple vegetarian dishes to ask for are: pasta with grilled vegetables, sandwiches, baked poatoes, or salads.

Another tip for surviving a meaty lunch or dinner menu is to ask if you can order off the breakfast menu. Explain to the waiter or waitress that you’re a very hungry vegetarian and politely ask if they could accommodate you with something from the breakfast menu.
